I had some pizza dough on hand to make grilled pizza when friends were supposed to come over a few weeks back, but they had to cancel. So decided to get rid of the dough with tonight's dinner.
1 1/2 pounds ground beef (I used ground chicken)
1 onion, chopped
1 (6 1/2-oz.) can mushroom stems and pieces, drained (I used fresh)
1 (20-oz.) pkg. frozen chopped broccoli, thawed
2 (8-oz.) pkgs. shredded mozzarella cheese
1 (8-oz.) container sour cream
2 (8-oz.) tubes refrigerated crescent rolls (used pizza dough because it had to go!)
Brown ground beef with onion and mushrooms in a skillet over medium heat;
drain.
Stir in broccoli and cheese.
When cheese is melted, stir in sour
cream.
Line a lightly greased 13"x9" pan with one tube crescent rolls.
Spoon ground
beef mixture over rolls; arrange remaining of tube rolls on top.
Bake, uncovered, at 350° for 15 minutes or until golden.
Cut into squares to
serve.
Kids loved it.
I usually buy from Fresh Direct produce, meats and dairy and don't usually see coupons for anything like that. I also don't have the patience or time to look for them if they are out there. I do however love me some coupons for bigger tickets items - -like 20% off at bed, bath and beyond or lord and taylor. On a related note I found a coupon in a magazine for a free holiday tissues box with purchase of Charmin toilet paper from target only. I have said it before and I will say it again - I love freebies.
I ripped that coupon out of the magazine and put it in a special little zipped case I keep in my pocket book. Of course remembering to use the coupon is today's Get It Done Tip!
I have in the notes section of my blackberry my meal plan for the coming weeks and another notes list for the corresponding grocery list by week. Below the grocery list I have a Target list and Costco/BJ's list so I can keep a running tab of things that I buy at those stores as I realize they are needed. For example, at the moment I have on my Target list - Seventh Generation dish washing detergent and laundry detergent AND "reminder to use coupon for free tissues". This ensures I don't have to rely on my memory -- and, quite frankly, is the only way it would ever happen. ;)
