We headed out to the zoo as soon as it opened. It was near empty so we hit up a dino tour that was new and wandered around without the crowds.
I packed a lunch of sandwiches and we sat on benches and watched the giraffes.
By 1:00 it was starting to get packed, so we headed out. Stopped at Whole Foods to pick up ingredients for tonight's dinner and a few other items for the week ahead.
We decided to make something we probably haven't made since the first year or so of marriage -
Saltimboca is prosciutto-topped chicken cutlets in a brown mushroom gravy atop sliced hard boiled eggs and wilted fresh spinach. It sounds odd, I know, but it was fantastic. I also sauteed some green beans with oil, garlic and panko. Everyone loved it.
I hate to waste food and had a box of organic nilla wafers that the kids didn't like. I found a recipe called Bananarama Pudding that I tweaked to repurpose the wafers and move them out of my cabinet!
Layered wafers in a dish, topped with sliced bananas, layered on top again with wafers (to clean out the box!). Then I poured Dr. Oetker's organic chocolate pudding over it. Put in fridge to set.
The wafers have happily left the building.
All the children have been sleeping since 7:30 which is unheard of in this house. I have my feet up sipping a caramel Bailey's on the rocks and my husband went to visit his parent's.
